Easy Missionary Meals (or anyone)

Thinking back as a Missionary, I had companions who I’m pretty sure lived for two years completely off of cold cereal. If it weren’t for the members who were very generous in providing us with a meal each evening, I think they may have starved. I prided myself on having a little bit more skill in the cooking department, but it still wasn’t glamorous by any means. Drinks and Dips

Good Morning Smoothie:

  • 1 (11 oz.) vanilla protein drink
  • 1/4 tsp. almond or vanilla extract
  • 1 frozen banana, broken up
  • 1 yogurt (any flavor you like)
  • 1/2 c. frozen mixed berries
  • 1 c. ice

Blend well! Serve and enjoy.


Italian Ice Water:

  • 3 c. sugar
  • 11 c. hot water
  • 1 (12 oz.) can frozen limeade

2-3 hours before serving, remove from the freezer and let it slightly thaw. Put it in a punch bowl and add 1 (2 liter) bottle of Sprite or 7-Up. Mix it together and ladle into serving cups. Makes 164 ounces. You can also add cherries or cucumbers.


Slush:

  • 6 oz. can frozen orange juice
  • 2 lemons, juiced
  • 5 bananas
  • 1 qt. pineapple juice
  • 3 c. sugar
  • 6 c. water

Liquefy bananas in blender with some of the pineapple juice. Mix all ingredients together and freeze until solid. Pour 3 quarts Sprite over slush and serve.


Nacho Dip:

  • 1-2 lb. Velveeta cheese, cubed
  • 1 can Ro-Tel tomatoes

Place in crock pot on LOW for about 2 hours. Stir every half hour. Serve warm with tortilla chips, celery, broccoli, or whatever. If it comes out too thick, you can add water or salsa.


Mango Salsa:

  • 1 mango, diced
  • 1-2 Roma tomatoes, diced
  • 1-2 green onions, finely chopped
  • 1 T. vinegar
  • 2-3 tsp. salt (to taste)

Combine all ingredients, serve with tortilla chips.


Easy Apple Dip:

Blend 1 (8 oz.) package of cream cheese with 1 cup of brown sugar until smooth and creamy. Serve with apples or other fruit.


Soups, Salads, and Sides

Taco Soup:

  • 3-4 cans of beans (black, kidney, pinto, any), drained and rinsed
  • 2 cans diced tomatoes
  • 1 can corn (optional)
  • 1 pkg. taco seasoning
  • 1 c. salsa
  • About 1 c. water

Mix all together and simmer 1-3 hours, until beans are soft. Serve with fritos, cheese, and sour cream.


Taco Salad:

  • 1 head iceberg lettuce, chopped or shredded
  • 2 c. grated cheese
  • Chopped tomatoes
  • Sliced olives
  • 1 can ranch style beans

Mix together ingredients. Put fritos on top. Pour creamy Italian dressing over and mix lightly.


Watergate Salad:

Mix:

  • 1 c. milk
  • 4-1/2 oz. cool whip
  • 1 small pkg. pistachio pudding

Add:

  • 16 oz. can crushed pineapple, drained
  • 1 c. miniature marshmallows
  • 1/2 c. chopped walnuts

Refrigerate.


 

Breads and Breakfast

Garlic Bread:

  • 1/2 cup melted butter or olive oil
  • 1 loaf french bread (halved lengthwise)
  • 3-4 cloves garlic, minced parsley

Combine butter/olive and garlic in a small bowl. Brush over cut sides of bread. Spring with parsley. Place cut side up on a baking sheet. Bake at 350 degrees for 8 minutes. Broil 4-6 inches from the heat for 2 minutes or until golden brown. Cut into 2-inch slides and enjoy.


Bread Sticks:

  • 1-1/4 cup flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. sugar
  • 2/3 cup milk

Melt 1/2 cube margarine. Roll dough 1/2 inch thick. Slice into “sticks” and roll in the butter. Sprinkle with any, or all, of the following: paprika, parsley, oregano, garlic, Parmesan cheese, or sesame seeds. Bake at 450 degrees for 20 minutes on a cookie sheet.


Cheese Biscuits:

  • 2 pkg. baking powder biscuits (tubed)
  • 2 cups grated cheese
  • 1 cube melted margarine

Place biscuits in cooking pan; sprinkle cheese over. Pour melted margarine over the top. Bake for 450 degrees for 8-10 minutes.


German Pancakes:

  • 1 cube butter
  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • 1/2 tsp. salt

Melt butter in 9×13 inch pan at 400 degrees. Blend remaining ingredients. Pour on top of melted butter. Bake at 400 degrees for 25 minutes. Cut into squares and serve with syrup and powdered sugar.


Waffles:

Sift together:

  • 2-1/4 cups flour
  • 4 tsp. baking powder
  • 3/4 tsp. salt
  • 1-1/2 Tbsp. sugar

Mix together:

  • 2 eggs, beaten
  • 2-1/4 cup milk
  • 1/3 cup oil

Add to dry ingredients. Mix well. Cook in waffle iron.


Scones:

Dissolve:

  • 1 cup lukewarm water
  • 1 Tbsp. yeast
  • 1 tsp. sugar

Let stand for 5 minutes.

Combine:

  • 2-1/2 cups flour
  • 1 tsp. salt

Optional – Add 1/2 to 1 teaspoon cinnamon. Add to yeast mixture and knead in mixer. Add 2 tablespoons oil. Mix for 5 minutes. Cover and let rest 10 minutes. Stretch out scones until flat and desired to size. Fry in oil at 350 degrees. Serve warm with butter, honey, and powdered sugar.


Main Dishes

Easy All-Day Stew:

  • 1 lb. stew beef, in chunks
  • 2 cans tomato soup
  • 2 cans cream of mushroom soup
  • 1 pkg. dry onion soup mix
  • 6 potatoes, cut up
  • 2-3 carrots, sliced
  • 2-3 stalks of celery, sliced

Mix all ingredients together and cook in crock pot for 8-10 hours on LOW or add 1-1/2 cups water and cook in large covered pot in oven at 300 degrees for 5 hours. Serve hot with fresh bread.


Spaghetti Sauce:

  • 1 lb hamburger
  • 3 large cans of tomato paste
  • 2 T. Italian Seasoning
  • 1/2 cup Sugar
  • 1 t. garlic salt or powder (optional)
  • 1 onion diced (optional, add while browning hamburger)

Brown hamburger and drain grease. Add the rest and simmer for a few minutes. Serve over spaghetti or any pasta. Use this recipe to make lasagna or baked pasta.


Sloppy Joes:

  • 1 lb. hamburger
  • 1 can tomato sauce or 1 cup ketchup
  • 1 packet of sloppy joe mix
  • 1/2 green pepper chopped (optional)
  • 1/2 onion chopped (optional)

Brown the hamburger with the peppers and onions (if you choose to use them.) Drain and add the rest. Simmer and serve on hamburger buns. Can simmer in the crock pot for hours.


Meat Loaf:

  • 1 lb. hamburger (un cooked)
  • 1 cup crushed saltine crackers or bread crumbs
  • 2 eggs
  • 1/2 onion (chopped)
  • 1/2 green pepper (optional)
  • 1 t. salt
  • 1 t. pepper
  • 1 cup oatmeal (optional)

Mix all ingredients and press into a loaf pan. Bake at 350 degrees until done (about 1 hour).


Taco Salad:

  • 1/2 to 1 lb. hamburger
  • Head of lettuce
  • Tomatoes (diced)
  • Olives (optional)
  • Tortilla or Corn chips
  • 1-2 cups grated cheese
  • 1 packet Taco Seasoning

Brown the hamburger and cut up the lettuce. Drain and rinse the hamburger and stir in the taco seasoning and 2 T. of water. Combine all ingredients and add the hamburger mixture last after it has mostly cooled.


Tuna/Salmon Patties:

  • 1 can of tuna or salmon (with liquid)
  • 1 cup of crushed saltine crackers or bread crumbs
  • 1 egg
  • Salt and Pepper
  • Onion (diced, optional)

Mix all ingredients and form patties. Fry on both sides over low heat until brown. Eat between bread or hamburger buns.


Baked Fish:

Lay fish on foil. Cut up butter and place on fish. Sprinkle seasoning, salt and pepper on fish. Slice on lemon and squeeze some juice on fish. Lay the lemon wedges on top of the fish. Fold and seal foil over fish so it won’t leak. Cook on a grill on low for approximately 15-25 minutes (depending on the size). Optional: Lemon pepper is a good substitute for fresh lemons and Canadian seasoning is also good on fresh water fish.


Baked Pasta:

  • 1 package of pasta or macaroni (cook as directed on box)
  • Spaghetti sauce (see recipe in hamburger section)
  • Mozzarella Cheese (or other type that you like)

Drain pasta and mix with sauce in a casserole dish or other baking pan with sides. Top with cheese and bake at 375 degrees for 45 minutes or until cheese is melted and it is heated through completely.


Macaroni and Cheese:

  • Cook 3 cups elbow noodles until tender, then drain
  • Add:
  • 1-1/2 cup milk
  • 1-1/2 t. salt
  • 2 C. grated cheese

Mix together and re-heat on medium until cheese melts.


Chicken Noodle Soup:

  • 12 oz. elbow macaroni cooked and drained
  • 1 can of water
  • 2 cans cream of chicken soup

Stir together. Add salt and pepper to taste.


Easy and Yummy Roast Beef:

  • 2 packages onion soup mix
  • 1 C. water
  • 4 to 5 lb. rump roast (cut off bottom fat)

Stir mix and water together and pour around the roast in a crock pot. Cook on low at least 10-12 hours. A fork will shred the tender meat. You can also cook in the oven at 350 for 4 hours. Serve with rice or mashed potatoes. This recipe is great to freeze and the microwave for another meal.


French Dip Sandwiches:

Cook any kind of roast, using the roast recipe above. Shred the meat and add some beef boullion and water to the drippings. Serve the meat on hard rolls and dip into the warm au jus sauce.


Beef Stew:

  • Stew meat or cut up un-cooked roast
  • 2 potatoes
  • 4 carrots
  • 1 cup frozen peas (optional)
  • Beef bouillon or soup base
  • 1 T. Worcestershire sauce
  • 2 T. sugar
  • 4 T. flour

Brown the meat in a pot and add about 4 cups of water. Add cut up potatoes and carrots and soup base and simmer until the vegetables are tender.

Add Worcestershire sauce and sugar and mix the flour in a cup of cold water. Stir until smooth and add to the stew to thicken. Add the peas right before serving. This recipe tastes better the longer it is allowed to simmer. You can place it in a crock pot to cook all day.


Desserts and Pies

Pistachio Pudding:

Mix together:

  • 1 box pistachio Jell-O pudding mix
  • 1 can crushed pineapple
  • 1 container Cool Whip

Oreo Dessert:

  • Oreos
  • 1/2 gal. ice cream
  • Chocolate Syrup

Crush Oreos and place in bottom of a pie dish. Soften ice cream (peppermint or mint chocolate work well) and spread into Oreo crust. Pour chocolate syrup on top and freeze.


Key Lime Pie or Lemon Cheesecake:

Mix 1 (8 ounce) package cream cheese with 1 can sweetened condensed milk. Add 1/3 cup lime or lemon juice (and a little green or yellow food coloring, if desired). Pour immediately into graham cracker crump crust. Chill.


Cheesecake:

Cream 1/2 cup milk with 8 ounces cream cheese. Add 1-1/2 cups more milk, 1 teaspoon lemon juice, and 1 package instant lemon pudding. Let set until it starts to gel. Pour into cracker crust and cover with 1 can cherry pie filling.


Strawberry Pie:

  • 1 pkg. strawberry jello
  • 2 Tbsp. cornstarch
  • 1 cup sugar
  • 2 cup hot water
  • 1 cup fresh strawberries
  • 1 baked pie shell

Stir together jello, cornstarch, and sugar. Add water to mixture and bring to boil on medium high heat. Cool until partially set. Add strawberries and put in pie shell. Refrigerate until set (about 4 hours). Serve with whipped cream.


Apple Pie:

  • 1 cup sugar
  • 1/2 to 3/4 cup flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • 1 tsp. lemon juice
  • 6-7 apples, peeled, cored, and sliced

Combine all ingredients except butter. Pour into unbaked pie shell. Cut butter into chunks and sprinkle on top. Put top pie shell onto pie. Sprinkle with cinnamon and sugar. Bake at 400 degrees for 50 to 60 minutes.


Raspberry Sour Cream Pie:

  • 2 Tbsp. flour
  • 1 qt. raspberries
  • 1 cup sour cream
  • 5 Tbsp. sugar
  • 1 unbaked pie shell

Preheat oven to 375 degrees. Sprinkle flour in bottom of pie shell. Fill with raspberries. Spread sour cream over top of berries and sprinkle sugar over top of sour cream. Bake for 30 to 40 minutes.


Sugar-Free Lemon Pie:

  • 2 small boxes sugar free lemon instant lemon pudding
  • 1 pkg. sugar free lemon Kool-Aid
  • 1 (12oz.) container Cool Whip

Mix pudding as directed. Add Kool-Aid and Cool Whip. Whip together. Pour into 2 baked pie shells. Top with Cool Whip if desired.


Candy, Snacks, Miscellaneous

Muddy Buddies:

Melt:

  • 1/4 cup margarine
  • 1 cup chocolate chips

Stir in:

  • 1/2 cup peanut butter
  • 1 tsp. vanilla

Pour over 9 cups Chex cereal (corn, rice, wheat, or combination) and stir until covered. Add 1-1/2 cups powdered sugar.Cover and shake or stir gently. Refrigerate.


Oreo Truffles:

Combine 1 package of crushed Oreos with 8 ounces of cream cheese. Roll into balls. Dip into melted chocolate chips. Top with some oreo crumbs, if desired. Freeze and serve once solid.


English Toffee:

  • 1 cup sugar
  • 1 cup margarine (2 sticks)
  • 1/4 cup water

Bring slowly to a boil and stir constantly until mixture starts to smoke and turns to color of brown paper bag. Pour onto a buttered cookie sheet. Top with chocolate chips while hot and spread when melted. Top with nuts if desired.


Caramel Popcorn:

  • 1/2 cup white corn syrup
  • 1 cup brown sugar
  • 1 cube butter
  • 1/2 Tbsp. water
  • pinch of salt
  • 1/2 tsp. vanilla

Bring to a boil and cook 1 minute. Take off heat and add 1/2 teaspoon soda. Stir and it will foam. Pour immediately over 1-1/2 packages of cooked microwave popcorn. If using air popped popcorn, add 1/2 teaspoon butter flavor and 1/2 teaspoon salt to caramel.
